Chinese Five-Spice Barbecue Sauce

Marinade/Finishing Sauce:

1/3 cup honey

1/4 cup brown sugar- packed

1/4 cup Hoisin Sauce

1/4 cup Soy Sauce

10 drops red food coloring

1 Tbs Heinz Chili Sauce

1 Tbs ginger, grated

1 Tbs garlic, pressed

1 tsp Crystal Hot Sauce

1 tsp Chinese 5-spice powder

pinch ground black pepper

1/8 tsp cayenne

1/4 tsp onion powder

For Smoking:

1 cup black tea leaves

2 Tbs 5-spice powder

In a saucepan, combine the ingredients of the marinade and bring to a boil. Cool. Divide the marinade in half, and put half in a large Ziploc bag with the meat, and allow to marinate for 2 hours up to overnight.

Cook the meat thouroughly before glazing with the finishing sauce. Remember: sauces like this one that contain a lot of sugar, must go on at the end of the cooking process, or it will burn before the meat is cooked.

Save some sauce in a separate container for garnishing at the end. Sprinkle your dish with green onions and/or sesame seeds for a special garnish!
